
Grate cucumber: Grate ½ large cucumber using a box or hand grater. After grating, drain excess water from cucumber by either squeezing the cucumber by hand, in a cheese cloth, or pressing into a strainer.
Mix ingredients with yogurt: To a medium bowl, add grated cucumber, 1 cup vegan yogurt, 2 cloves garlic (minced), 3
tablespoons fresh dill (chopped), 1
tablespoon lemon juice, and a generous 1 pinch salt and pepper. Use a spoon to mix all ingredients until well combined.
Garnish and serve: To serve, add tzatziki sauce to a bowl and drizzle with 2 teaspoons olive oil. Garnish with a sprinkle of fresh dill.
Serve as a dip, as a topping for pita or wrO
or even add a few dollops to a salad to double as salad dressing.
